- 1 bunch (about 1 lb.) asparagus
- 2 tbsp. olive oil
- Salt and pepper, to taste
- ¼ to ½ cup crumbled blue cheese or Parmesan cheese
Preheat oven to 400 degrees. Wash and drain asparagus. Snap or cut off tough ends. Toss the asparagus with the olive oil, salt and pepper. Roast for 20 minutes until tender but still crisp. Remove from oven and sprinkle or shave ¼ to ½ cup Parmesan cheese or crumble the same amount of blue cheese over the asparagus. Serves 4.
Variation: Instead of the cheese, sprinkle a tablespoon or two of lemon juice, which enhances the flavor.
